Try this. (pre heat oven to 350 )
Dump a roll of ritz crackers in a ziplock bag, close bag and crush (roll w/ pin) Leave breasts whole or cut in strips.
In another bag put 1/2 cup of mayo.
Throw some chicken in the mayo bag and squish around, then using tongs, pick the chicken out and put it in the bag of crushed crackers, coat and place on sprayed pan.
Cook for about 20 minutes for strips and 30 minutes for whole breast.

It's really really good! Soft tender and juicy.
