Most mussel recipes involve steaming them in a pot with white wine, garlic, shallots, lemon, and some herbs. Foodnetwork's website has some good recipes and here is a basic recipe from Bonefish Grill, which has these as an appetizer and I love it, soak up the sauce with some of their bread, yummy yummy.

4 cups mussels

Steam mussels in skillet over high heat until shells open up

Combine the following ingredients to taste:
Chopped red onion
Chopped tomatoes
Kosher salt
Minced garlic
Basil cut in strips
Annissette (licorice-flavored cooking liquor)
Lemon butter sauce

Combine all ingredients to create a sauce, pour over mussels in large bowl.
