Never had plants in water with a pH of 3.0 before. So, I do not have a clue how long it would take to mess 'em up in water like that. I am going to guess it would not take long.

Anyways, I'd do straight pH'd water for a few until they get back to normal. Thats not going to hurt them.

Remember, that plant is alive same as we are, so to speak. It has defense mechanisms to protect it same as we have an immune system. Therefore, when conditions become something they are unable to tolerate they shut themselves down to try and survive.

So what if you add a week to the grow? You made the boo-boo, not your plants. So, you gotta deal with it. Next time you'll know not to do what ya did this time. This hobby is all about learning anyways.

Hydro is not real forgiving, at least in my opinion. Thats why you keep excellent notes and you learn to dial it in on the fly with as little stress to your plants as possible. We are not mother nature, but inside we need to be as close to her as possible.
