Basic Curing Question

I like the old fashion way....put your buds in a brown paper bag fold the top over so no light gets in,but not so tight that it holds air,then toss it in the bottom of your closet for a cpl weeks.

Basic Curing Question Why is it that you have to cure your buds for about 2 weeks to a month and how do you do this? i heard of water curing with jars... so whats wrong with just drying them out and smoking the buds?
