actually it could.... the T-virus wasn't developed to be gene specific... T-Virus - Wikipedia, the free encyclopedia

basicly, it attatches to any living cell and transforms it... the reason people degrade faster and faster the longer they've been infected is because the mutated cells keep reproducing... so more and more cells are reproducing near the end, until (i guess) finally the damage results in th ebody shutting down.... which of course... then they rise from the dead... although they're no longer human...

but it's 100% plausible that it could affect any living organism...

in the books there are even mutated sharks... and lets not forget, the entire racoon city outbreak resulted from an infected rat escaped....
