Does drying/curing need constant attention ?
i wouldnt say that you can cure w/out being there. you will most likely come back to mold or a terrible amonia smell. the holes will help and it is curing it somewhat, but not the same thing. i dont have any suggestions for you but i wouldnt do it. deffinately not a jar if you cant be there to check on it. sorry no help here. maybe the freezer? which i wouldnt really do either.
