more surface area means non-uniform, and therefore is not a real scientific experiment.

How about this:the most likely explanation is the water vapor carries away a certain amount of heat. when water cools down from near boiling to the freezing point, as much as 16 percent evaporates away, compared to 7 percent for water at 160 degrees. The smaller the amount of water, of course, the faster it freezes. The hotter the water, the faster it will freeze.

idk, i just thought it was maybe a high school thing. when i read into the page i see you're talking about carbonated water?
so that does not change the molecular make-up of the water but does probably change the environment on a microscopic level. like adding microscopic insulation.
thats interesting, i guess....

I remember it has something to do with the speed of the atoms but I'll be damned if I remember just what it is.
