Is it wrong to grind up all of your weed at once?

It's not so much that the THC "escapes" the bud, but once you grind it up there is more exposed surface area. Would you agree that if left in open air buds will eventually degrade? The more surface area the faster this process happens, like the sugar cube example I gave. A small amount might not show a noticeable difference however since it's consumed more quickly.

Yes, i agree completely that if any bud is left out it'll dry and start to degrade in potency.

But, we're not talking about leaving them out, i was under the assumption that everyone stores their bud in something airtight - and if the bud, or gound bud is stored in something air tight, in a cool dark place, nothing will degrade, and it wont matter how much surface area there is.

But you are right, if left out in the open, ground up bud would degrade faster than non ground up buds.
