if you're faking sick, it's not about what you say, it's how you say it...

if you say in a cheerful-upitty voice "yeah man, here's the deal, i'm sick today so i ain't gonna be able to make it in" they're gonna know you're full of shit...

if you say in a strained voice "cough cough hey, do you think you ca-cough-n get anyoen to cover for me today? ~sigh indicating you're tired and worn out~ i'm not ~sniffle~ feeling too good...

well, i'm gonna try to get a doctor's appointment after i get off the phone with you, i really NEED you to get someone to cover fo rme today, i'll make up for it later... ~cough~

oh yeah, hold one nostril shut while on the phone (seriously, it will make a diffrence... if you do two, you risk sounding over elaborate... completely closing off one, is more then enough to simulate sinus problems (a more then common occurance among sicknesses...)
