can I create a grow op on the forest floor of a sycamore/birch/beech tree forest without cutting down trees?

you need some direct sunlight atleast 6 hours but if they get more than 6 hours your plants will probably even do better.
stretching isn't something you can control, other than giving them more light. plants in shade will stretch and will not have very many branches and will probably die from the very thin stem before they even start to flower.
if you want to grow in a forest look for a clearing, or small trees that you can remove some limbs from easily if needed to allow sunlight in.

The simple answer is no. Sorry. Too bad you can't successfully grow in the middle of a forest or this whole thing would be so much easier and good grow spots would be everywhere. For good results, you need complete unobstructed overhead clearing and at least a bit to the sides. This usually means at least 25-35 ft from the nearest taller tree's trunk in order to be clear of it's canopy overhead.
