early stages
Just wondering about the early stages..how long on average does it take to go from a planted (germinated) seed to a sprout? And is it a major issue if the taproot isnt facing down in the soil?

Should sprout in no more than a couple days, tops. Especially if the seed is pre-germinated before planting.

And no, the tap root pointing up isn't the end of the world. It will most likely correct itself because of gravitropism. Basically that is a fancy word meaning that the plant cells respond to gravity, roots go down, leaves go up. It will most likely take a couple days longer to sprout than a right-side up seed.
The following is a pic of a zucchini seedling that was planted upside down. Check out how the roots are already correcting themselves
