Paul Gilbert.
Really fast, obviously speed doesn't really mean good...but they are good at playing fast.
Petrucci is also another one of my favorites.

my personal favs are SRV first, that guy had a gift from God.

i also second Stinky's mention of Bonnie Raitt, she also plays a mean piano and writes straight to the heart.
