Red wines and many white wines should never be chilled... Cabs and Pinots should always be at room temp and you should open the bottle several hours before you are going to drink it. I know people that open all their wine bottles up at 10 AM and let them breathe all day for a party at 7pm. You would be surprised how much better even cheap wine will taste when allowed to breathe properly.Quote:
