So, my title has nothing to do with my post, so just to clarify, there is no monster turtle attack...yet....
So, if I buy a San Pedro from somebody, and it's like a foot tall, can I just peel and eat, or do I have to wait until it matures or something?

You could just eat it, but do you really want to chow down on a foot of slimy bitter cactus? In my opinion, it is better to boil it down and drink it. Also, remember not to eat the fibrous white center, as it has negligible amounts of mescaline and tends to make one sick. There's several prep techniques on erowid for how to despine an otherwise prepare it.
I would, dude, but I'm afraid I have no access to anything capable of boiling water. I've looked on erowid, but they didn't really say how one could tell if a cactus was ready. I guess if it's over a foot tall its ready, but I wanted to check.

The cactus is ready when it reaches the size that you want. Depending on the potency(highly variable) a one foot cactus could give from no effects to moderate effects. Just decide how much cactus you want to eat, and the intensity of the trip you want, and wait til the cactus gets to that particular size.
And you can't boil water? Or you you just don't have access to the kitchen without someone else being there? Can you go camping? Make a campfire and cook that shit up and trip in the woods. That would be badass.
