CHOCOLATE TRUFFLES
Ingredients:
1 1/2 cups semi-sweet chocolate chips
4 T green butter (regular butter works too)
1/4 cup white sugar
2 egg yolks, beaten
1 cup finely ground and blanched almonds
1/3 cup of liqueur (Kahlua, etc.)
Icing sugar, sweetened powdered cocoa, ground nuts or chocolate sprinkles to roll the truffles in
Instructions:
Melt chocolate in double boiler. Gradually add butter. Add sugar, stir constantly until it's dissolved. Remove from heat to cool, but don't allow mixture to harden. Take 1 - 2 Tbsp. of the hot chocolate mixture and add to the egg yolks to warm the yolks before adding them into the chocolate. Stir. Add ground almonds and mix well. Stir in liqueur. Put in fridge to harden and cool. When firm use a spoon or melon baller to scoop enough of the mixture to make a 1 1/2 inch ball. Roll in palms to make a ball. Roll in coating of your choice. Put in small paper cups. Freeze well. Yields 24 truffles
