I think mimicking nature as accurately as possible is always best. If you're spraying water on leaves, you're also taking the time to inspect them, rotate them, and just giving them a general "once over". It sounds like, if you set a timer on a (I assume cool mist) vaporizer, you could check on them less and show them less love, which wouldn't be a good idea!
Plus, I think if you had the vaporizer running the amount of time it would require to sufficiently nourish the plants with water, your humidity would be too high and there would be a huge mold risk.
