The medium doesn't "do" anything except allow for transport of nutrients and oxygen to, and away from, the plant's roots via water. As long as those things are being accomplished, it doesn't matter whether it's little balls of clay or dirt or air. I think it would have to be what's going into the plant and/or what's still in it that controls how it tastes or burns, not how it got in.
