How do you know when your female plant bearing seeds is finished?
when brown or dark brow with lighter spots. Also they will just drop them some times. I have heard some people just pop one out now and then to see the color. If they are yellowish or green they are not done yet.
If you look at the calyx surrounding the seed, many times they'll begin to split open before the plant is even ready to be harvested and are already bearing mature seeds. I don't try collecting the seeds until I'm actually consuming the product, though, since I've heard they will still mature some more during the drying/curing process.

Most seeds are viable about 5 weeks after pollination, but I usually leave 'em till 6 or 7 weeks whenever possible.
