Is it easy? NOPE. Try drilling holes in a refrigerator... lol.
However you're right the the basic setup has potential. You can buy shelving units with doors, like tool closets or wardrobes, that have a similar proportion and are MUCH easier to drill, without any loss of stealth.
It's not too hard to rig one up. My biggest concern is the lighting issue. I happen to have a fridge that currently is in use.
I have a little fridge about 3 ft tall or whatever, just a dorm sized one. If you pick up a metal drill bit it is no biggie getting through.
I just took the metal plate off the back, drilled about 1/2-3/4 inch hole in the back to run wires through, and put all the wiring in the little freezer part.
It runs a little hot with the fan even, about 80-85, one thing i need to work on.
Although, it is mostly used for my clones. I have 4 plants flowering in it now for the next 2 weeks until my others finish and I have more room.
Get creative with it. I had fun.
