when did you fertalize the plant ? i bet late..
smokealot sounds right. I would guess you gave the plant too much N in the last week or weeks of its life. You need to stop with the nutes about 1-2 weeks before harvest and just give it plain water. Another possibility is that you didnt cure long enough or didnt air out the curing buds often enough. Personally, 1 week is never enough curing for me. Good news is, if that seems likely, you can just pop em back in the jar for a few more weeks and air them out a couple times a day.
On the up side, you don't have to be dry while curing. You can still get high from the curing buds as they cure, but it'll still probably taste like chlorophyl.

You want to RESTRICT nitrogen in flower. I consider it a good thing to see significant yellowing a week before harvest- that tells me the chlorophyll is breaking down and not being replaced.
