Linguica mmmmm but any dry, spicy sausage is fine by me. Chorizo is good.

Easy fajitas
Ingredients:
Chorizo (the crumbly mexican kind, i think there are other sausages with simliar names)
Beef/chicken/shrimp/any meat
Onions and bell peppers (not for me personally, i hate bell peppers, but you gotta have the onions)
Soft tortillas
All the shit you like to top your fajita with
The key to this dish is that the chorizo provides all the seasoning, its has such a strong flavor that its really all you need, the fattier and spicier the chorizo the better :D
The cooking: Get a frying pan large and deep enough to hold all the ingredients, fry up the chorizo for about a minute while crumbling it up in the pan, add sliced onions and peppers, when the fat from the chorizo has greased up the pan add your other meat, cook until the meat is done. The only thing to watch out for is to cook it long enough to soften the onions and peppers and of course fully cook the meat, without overcooking the meat. Put on tortillas, top and serve. Quick and delicious.
How I got the idea: If you're like me and you have a bunch of mom and pop Mexican restaurants around (the ones in old Pizza Huts are best :)), next time you're there look for a fajita dish with chorizo in it, it usually has a bunch of different meats and is called something like house special fajitas or mexican style fajitas. Its my favorite dish from those kind of Mexican restaurants and where I got this idea.
Chorizo... i know all about it.. i ate it everyday living in carson. I even made it for breakfast :).. it is so0o bomb.. my fav mexican style breakfast involves chorizo
