that's the type of cactus it is, before it's cooked... first they dethorn it (of course.... man that really would be one mexican food you'd regret later LMAO) then peel/skin it and cut it into green bean sized slivers...

slip you just said it was your favorite........I've never heard of eating cactus either. It's not those super old cacti (?) cactuses (?) is it....what are those?

Nopalitos (Little Cacti) recipe
3/4 pound nopal cactus paddles
2 tablespoons olive oil
1 jalapeno chile, seeded and minced
1 medium onion, chopped
3 tomatoes, chopped
1/2 teaspoon salt, or to taste
1 tablespoon vinegar
Remove thorns from the cactus paddles and cut them into strips about 2 inches long by 1/4 inch wide. Boil the cactus paddles until they are soft and the texture is much like that of cooked bell pepper.
Heat a saucepan over moderate heat. Add olive oil, jalapeno chile and onion. Cook until the onion is soft but not browned. Turn the heat to low. Add tomatoes, cooked cactus paddles and salt. Simmer, uncovered, for 30 minutes, adding the vinegar for the last 5 minutes of cooking.
Serves 4.
'course its much tastier to get it from a good mexican restaurant...cuz they dont use the cactus from the jar...they use fresh.... *drools* damnit now i gadda send slip to buy more tommorrow. we actually got into a "fight" over who could have the cactus.
you get some flour tortillas, spread on some refried beans, then scoop some nopales onto it, roll it up and *droooooooooooool* god they're tasty. if you eat too much of em, you'll get tired of it prolly (well, slip doesnt lol) but every once in awhile....god they're good
