Funky Chicken Salad Wraps
\Funky Chicken Salad (originally from Black Bear in Morgantown, WV)
3 Chicken breasts, boil them in a pot untill cooked, appx. 10-15 min
then set aside in refridgerator.
1 2oz. package of chopped walnuts
1/4 cup of raisins
1tablespoon of curry powder of your choice ( I use red madras)
about 1 cup of mayonaise (might be 1.25 cups)
Whole wheat tortilla wraps, or sundried tomato, cheese (plain ones don't taste right)
Cherry Tomatoes, quartered
Romaine Lettuce
Cooking;
Cook chicken breasts in a pot of water about 15min or till juices are clear. Let them cool then dice them up and put in a bowl that you can cover.
Add the walnuts, raisins, curry, and mayonaise.
Fold everything in and cover and let sit in refridge (could be ready immediately though)
Now for assembly:
Heat up your tortillas.
Put a piece of romaine in the middle of the wrap.
Spoon in about 2TbSP of Funky Chicken Salad, spread it out over top 3/4's
Add tomatoes
Wrap and enjoy
