Russell Stover Pecan Brittle

1 C. Sugar
1/2 C. Light Corn Syrup
1/2 C. Water
1/2 tsp. Salt
2 Tbs. Butter
1 1/2 C. Pecan Pieces
1 tsp. Baking Soda
2 tsp. Butter Flavoring
Candy thermometer

Stir together sugar, corn syrup, water, butter, salt, and butter flavor. Bring to simmer on medium heat and place lid on pot for one minute then remove lid. This will steam all sugar crystals on side of pot and they will slide down into mixture. Place a candy thermometer in pan and continue to cook on medium heat stirring frequently until candy reaches soft crack stage. Add nuts and mix through, continue to cook until mixture reaches hard crack stage. Remove from heat and add baking soda. Mixture will foam, make sure you blend baking soda into candy completely. Pour on to a non stick cookie sheet or lightly buttered baking sheet. Spread to 1/4" thick or less while mixture is still hot, candy will start to harden quickly. When set and cool brake into pieces and store in air tight container.

Deep Fried Candy Bars

1 egg
1 C. milk
1 Tbsp. of vegetable oil
1 C. all purpose flour
1 tsp. baking powder
a pinch of salt

1. . Combine egg, milk and vegetable oil in a cup. In a bowl combine flour, baking powder and salt. Pour the wet ingredients into the dry and mix well with a whisk. Cover and chill for a few minutes as you heat the oil.
2. Use a chocolate covered candy bar for best results and make sure that it is chilled, some bars work better if frozen (Mars is the "traditional" bar but Snickers, Almond Joy, and even Twix and Kit Kat will work.) After the candy bars are chilled and cut remove the batter form the refrigerator and adjust the consistency if necessary.
3. Heat about 4cups of oil or shortening in a medium skillet to 385 F. Drop the chilled candy bar in the batter and gently place into the oil. Cook only until the outside is golden. Remove and drain on brown paper. Allow to cool a minute, the inside can easily burn your mouth.

MSG stands for Monosodium Glutamate. It is a spice, found in your grocery store. It can be sold as MSG or under the brand name "Accent". Some people are extremely allergic to MSG, over 98% of the population is not. It serves to make flavors stronger, and almost pop right out at you.
. Fines herbs used to be used more frequently many years ago. Fines herbs was a poultry seasoning. Since so many people have difficultly in obtaining the herb, it has been removed from the recipe. If you can access Fines herbs add 2 teaspoons to the flour mixture.

PICO DE GALLO SAUCE (RECIPE FOLLOWS), FOR CONDIMENT

To make pesto, put cilantro and garlic in a food processor and process until finely chopped. With machine on, gradually add olive oil. Season and blend in cheese.

Slice enough onion to equal about 1/2 cup. Sauté with margarine in a small cast-iron skillet over medium-high heat. Cook past translucent stage until browned, about six to eight minutes.

Prepare about 2 cups of vegetables -- the combination depends on personal taste. Cook all vegetables except mushrooms in lemon juice and 2 tablespoons of pesto over medium to medium-high heat. When almost at al-dente stage, add sliced mushrooms. Continue cooking for about one minute. (The remaining pesto can be refrigerated for future use.)

Place vegetable mixture over sizzling onions, then spoon vegetable-onion mixture into center of warmed tortillas. Top with condiments, to taste, then roll up tortillas.

Three tortillas make one very generous portion.

Outback Steakhouse Bloomin Onion

1/3 C. Cornstarch
1 1/2 C. Flour
2 tsp. Garlic -- minced
2 tsp. Paprika
1 tsp. Salt
2 tsp. Pepper
24 oz. Beer
4 Vidalia or Texas Sweet Onion

Please note that the 24 oz. of beer seems to be too much. That is the recipe as originally given to me. If you use that quantity it will be too much beer. Start with 1 cup of beer, and add until you get the batter to the consistency that you desire.

Seasoned Flour

2 C. Flour
4 tsp. Paprika
2 tsp. Garlic powder
1/2 tsp. Pepper
1/2 Cayenne pepper

Combine and mix well.

Mix cornstarch, flour, and seasonings until well blended. Add beer, mix well. Cut about 3/4" off top of onion and peel. Cut into onion 12 to 16 vertical wedges but do not cut through bottom root end. Remove about 1" of petals from center of onion. You may want to separate the onion petals slightly, do not do this too much, you will destroy the onion. Dip onion in seasoned flour removes excess by shaking. Separate petals to coat thoroughly with batter. Dip in batter. Dip in flour mixture again. Gently place in fryer basket and deep-fry at 375 to 400 1 1/2 minutes. Turn over, and fry an additional 1 1/2 minutes. Drain on paper towels. Place onion upright in shallow bowl and remove center core with circular cutter or apple corer. Serve hot with Creamy Chili Sauce.

White Castle Hamburgers

12 - 14 Dinner Rolls (Parker house shape, 2 1/2" x 2 1/2" size)
1 lb. lean ground beef (80% lean)
1/2 C. water (for beef)
1/2 tsp. Salt
3/4 C. diced onions
1 beef bouillon cube
1/2 - 1 C. Water (for onions)
Dill Hamburger SlicesMethods/steps
In food processor place ground beef, salt and water. Process for a few seconds so water and salt are blended through ground beef and meat should look a little pasty. On a 11" x 13" jelly roll pan place plastic wrap on bottom. Place hamburger in middle and with another piece of plastic wrap on top of meat. Roll hamburger out to 1/4" thick. Remove plastic wrap and cut meat into 3" x 3"squares, leave ground beef pieces on tray. You should get between 12 and 14 squares. Perforate each piece five times with the end of a plastic straw, this will give the meat little steam holes. Cover hamburger with plastic wrap and place in freezer until meat is partially frozen but not solid.

Place onions, beef bouillon, and 1/2 cup water in fry pan. On medium low heat sauté and stir onions until they are clear, more water may be added as needed. Turn heat off until ready to cook hamburger patties.

When beef patties are ready to prepare, turn fry pan on medium low heat and add enough water to onions just so the bottom of fry pan is covered. Place patties in pan and cover with lid. Frying time is just a few moments. Turn patties and cook until done but not dry. The patties should be juicy. When hamburgers are finished cooking place on top of a roll add pickles, cover hamburgers so they will steam slightly or pop in microwave covered just for a few seconds until ready to serve.

Pizzeria Uno's Pizza

Olive oil or cooking spray
1 package active dry yeast (I use Viva Pizza Yeast from Williams-Sonoma)
1 C. warm water, (110 to 115 degrees)
3 to 3 1/2 C. all purpose flour
1/3 C. olive oil or cooking spray (I use only Bertolli Extra Light Olive Oil)
12 ounces mozzarella cheese, sliced
1/2 pound Italian sausage, mild-cooked, drained and crumbled
1 15-ounce can tomatoes - whole pear or plum, drained (I use 2 15-ounce cans
of tomatoes)
1 tsp. dried oregano, crushed
1 tsp. dried basil, crushed
1/4 C. Parmesan cheese, grated
fresh mushrooms, sliced or chopped green pepper (optional)

Methods/steps
1. Generously brush a heavy 10 x 2-inch round cake pan or 10-inch spring form pan with olive oil or cooking oil. (I use the same dark baking pan as they use in the restaurants, it gives a much better crust.)
2. In large mixer bowl, sprinkle yeast into warm water. Stir till dissolved. Stir in 1 1 /2 cups of the flour; the 1/3 cup oil, and 1/2 teaspoon salt. Beat at low speed 30 seconds, scraping bowl constantly. Beat for 2 minutes at high speed, scraping bowl often. Stir in as much of the remaining flour as you can.
3. Cover, let rise in warm place till double. Punch down. Let rest 5 minutes.
4. Turn dough into pan. Using oiled hands, spread dough evenly over bottom and partially up sides of pan. Cover; let rise till nearly double, about 30 minutes.
5. Arrange cheese slices in 1/4-inch thick layer on dough. Gently press sausage on cheese. Using hands, gently crush tomatoes into small pieces atop sausage. Sprinkle with herb and Parmesan.
6. Bake in a 500 degree oven for about 25 to 30 minutes or till edges of the crust are crisp and golden brown. If desired, sprinkle the pizza with sliced mushrooms or chopped green pepper during the last few minutes of baking time. let the pizza stand 5 to 10 minutes before cutting.

Makes 4 to 6 servings.
The pizza yeast is great from Williams-Sonoma. It makes a great crust. I use only Bertolli Extra-Light Olive oil, because it doesn't have a real heavy olive oil taste. This pizza recipe is not like the other Chicago deep-dish which uses yellow cornmeal, which have been made by other famous restaurants

I use the sause i posted about then i get a large pan and make my dough from a mix like bisquick. then i layer my veggies and cheese. like 3 pounds of cheese 1 pound of beef,1 pound of ham, 1 pound of pepperoni, 2 large bell peppers,2 large yellow onions, 1 package of mushrooms, 1 can of olives. in a large turkey roaster. it will need to cook for about 45 min to an hour till the crust is golden brown, not burnt, then pull and cool. serve it up. my slices are cake squares about 7" X7". lol and about 4" deep.
I am infamous with family and friends for GK deepdish.lol

most resteraunts are willing to give the recipes up. just ask to talk to the cook and praise him. he will prolly spill the beans. lol pardon the pun lol
