The psychedlic stuff coming out of SF in the late '60's is one of my favorites. I've been a big Dead Head since my first Dead show back in 1985. Santana and Jefferson Airplane were also fantastic. Oh, and who can forget Big Brother and the Holding Company (Janis Joplin)
For some of the lesser known stuff, Quicksilver Messenger Service was fantastic. I'm surprised more people don't know about their stuff now. Another good band was Sir Douglas Quintet. They were originally from Texas but moved out to San Francisco to be part of the scene.
Ever hear of Hot Tuna? Jorma Kaukonen and Jack Cassidy, the original guitarist and bassist from Jefferson Airplane. Listen to the Jefferson Airplane song Embryonic Journey, that pretty much just Jorma and Jack. They split off from Jefferson Airplane when the band started to go more mainstream, eventually becoming Jefferson Airplane. Anyhow, Hot Tuna is awesome and still playing today. In fact, i just got tickets to a show they're doing down in Santa Cruz. Should be a smokin show :stoned:

I'm a fan of the Dead, though I wouldn't call myself a dead head. Also enjoy Jefferson when it comes on.
