It is a plant that displays both male and female sex parts.
Can be caused by stress, exposure to certain chemicals, or weak genetics.
Females can 'go hermie' during flower without being noticed unless you look really closely, and seed your crop.
A frequent cause of hermaphrodites is poor control of your lighting schedule, or light leaks.

if you have a female and then you start to see pollen sacks can u just pick them off and keep growing like a female and just keep pickin male parts?

Yes, but you may end up with a few seeded buds like you find every once and a while.
