How old is the plant? Have you been giving it nutrients?:)

It's probably because the leaves are finished taking up nutrients, and are storing it for later use:) Nothing to worry about..:)

Or the "phenotypes".

Before you ask, search.

My plants have purple/violet-ish stems all over the place. :)

Purple stems can mean a few things.
Everyone wants to jump on magnesium deficiency but that's usually not the case. If you have a plant with purple stems and it looks perfectly healthy, it's fine. Keep in mind the stems don't process photosynthesis therefore they don't need to be entirely green to do their work. Seedlings almost always have purple stems.

As far as phenotypes, turtle couldn't be more correct.

Think of the purple stems as me having brown eyes, it's just a physical trait.

IT is usually not a good thing!!!
post a pic and more info about your plant...
age...
nutrients etc..

is the new growth better than the old growth.. bigger leaves.. etc ?

I know what causes purple stems....

Large temperature differances during the cycle.
