I would reckon that you burn it for a few secs or so.

Ive had a few flaming sambucas in my time and if you leave it burning for too long:

A) The glass gets damn hot, and its not a good look having a shot glass stuck to your lips.

B) Your burning off alcohol, so get it down you quick style.

Flaming shots are all good, up to a point. If you get to the stage where you forget to put the flame out before you drink it then you know its time to take a wee breather.

for absinthe, you should put a sugar cube on an absinthe spoon and drizzle the absinthe over it into your glass. the cube should be soaked enough to light on fire, then the sugar will carmelize a little, then drop it into the glass and blow out the flame, add ice cubes and enjoy. but don't have any more than 3 or 4 small glasses, you'll get too drunk and not feel any of the affects.

Try this version:

Frozen Chocolate Mudslide

3/4 cup chocolate ice cream
1/4 cup real cream
1 1/2 oz Kahlua
1 oz Irish cream
1 oz Absolut vodka

Heres one of my favs:

1960s Tequila Margarita

1 1/2 oz tequila
1/2 oz cointreau
1 tbsp lime juice

I prefer sour cocktails to creamy ones anyday.
