seed question

I have 5 seeds that have survived that are about six weeks old now. 2 of them I put right into hydro system as soon as they were about 3 inches big, the others are in 5 gallon buckets with soil.
The plants in hydro took off quickly and had side shoots and everything. The plants in soil are basically still growing tall and straight with no branching.
I need to know when the plants are mature enough to work with. I heard that you have to wait until the fan leaves are not growing in even pairs or something to that effect.
The strain is S.A.G.E. from THC seed co. They are supposed to be feminized.

Slow and uneven growth in addition to possible lower overall medicinal potency may come from plants that are not genetically at least two months old before they are put into flowering or cloned.
