Around what week of growing the original plant should you take cuttings to start regrowing

Wait until the plant is large enough that you can take the cuttings you need, and still never remove more than 50% of the plant.
If you want one cutting, top it at about 8 nodes, leaving 5. If you want more, pinch it at 5 nodes and let the side growth develop significantly before cloning.
