How long is a piece of string?
72 plants in a 3x6 is a good number. Start from there, do the best job you can with the tools you have, and never forget that it is bad luck to count your chickens before they hatch.

The footprint under a 1000w should be approximately 5x5 feet.
I think that if you have not yet pruchased your gear, a set of 4- 600w HPS would suit a pair of 3x6 tables better, each intensely lighting a footprint just over 3 feet square- you train the edge plants out a bit to make use of the extra light, and keep the room only slightly larger than the trays so that light is simply reflected back to the plants.
But if that is what you already have, no worries, you will be totally fine.
