So there is this old cabinet that I have, it is about 15in Dx23in Wx59in H. I know pretty much you can easily grow in a lot smaller cases if your setup is good and you are creative. I have a 250w HPS light from a friend, I was just wondering if this is enough closet space and about how many plants can be grown. I was thinking, at the very most, is two. I have some White Widow seeds that I want to grow. I would just hate to just go one at a time and then have it grow male on me. Thanks for your help!

I'd say, since your cab is almost 5 feet hight, you could certainly grow 1 big plant. The main limiting factor here is the 15inch depth. Though you can probably train it to grow 2 with a scrog and some LSTing. Why not germinate three seeds, see if you can get a female, and if it turns out all three are female, chuck one or find somewhere else to grow it.
I am by no mens an expert either.

That's plenty of space, and 250W HPS will be perfect. Two plants would be a good number, so grow 3 because what are the chances of all being girls? Bear in mind that many seeds do not even germinate, I recommend getting started right away with 5 seeds in a cup of water.
A great tip for closet growing is get yourself some of that foam strip for keeping the doors air-tight. Will you need to make a carbon filter, or does the closet intend to be a skunk-scented aerosole for your humble home?
