I tried the damp tissue method with a few seeds the other day, and this morning a couple of them have started to show roots. Question is: How do I transplant the seed to the soil? Will the roots get damaged if I touch them? And how do I lay the seed in the soil? Which direction? Thanks guys. Probably some dumb questions, but I usually just throw them in the ground, without sprouting first.

Just stick them in the soil. Plants have a sense of gravity, and will grow away from it.
I usually plant directly in soil, but when I first started I did germinate. As soon as the seed pops plant it, sothe roots don't get damaged.
Just be carefull and you'll be fine.

Handle with care trying not to touch the root , tweezers are handy for that.
Plant around a 1/4 inch down (I poke a small hole in the soil using a pencil) and gently cover them.
