I'm about a month into flowering and a recent change in my work schedule only gives me 15 mins with my plants every day. Can I adjust the light schedule in 5 or 10 min increments so I can have some more time with them when the lights are on?
Lights are on from 6pm to 6am. I only want them to come on half an hour earlier. I need to be more like 5:30 pm to 5:30 am.

IMO that shouldn't be a problem at all... I've moved my lighting scheduale a full 12 hours over the course of 1 month with NO problems at all... I would just do it in 1 or 2 steps... 30 min isn't much

extra dark. extra light increases possibility of returning plants into veg

I would honestly do both at the same time, but less dark and less light. Adjust the preceeding light and dark periods to be 11h 45m, then you will gain your 30min in one day with no problems.
