it's good, and simple to make too...

Frito Pie

1 pound Velveeta cheese, cut in cubes
1 can (10 oz.) Rotel diced tomatoes with green chiles
1 package (10 oz.) regular size Fritos
2 cans (1 pound, 8 oz. each) chili without beans or about 5 cups homemade chili
8 ounces cheddar cheese, shredded
Preheat the oven to 350F degrees. Spray a medium-size baking dish with non-stick spray. Combine the cheese and tomatoes in a saucepan (or see note below to use the microwave) and heat slowly until the cheese melts. Heat the chili in another saucepan.
Place half the Fritos in the baking dish. Spoon half the chili over the Fritos. Cover with a layer of cheese sauce. (There will be cheese sauce left over to use as a dip.) Scatter the remaining Fritos over the cheese. Cover with the rest of the chili and sprinkle with the shredded cheddar cheese. Bake uncovered about 20 minutes, until hot and bubbly.

i highly suggest using most of the 'cheese sauce' tho... the velveeta is the cheese that makes it great...

Yummy Frito pie. Ten years seems wait too long to go without one of those.

At my highschool we had walk away tacos. One of the lil bags of fritos, taco meat lettuce, and cheese. It was good stuff.

Frito Pie is a Texas mainstay. Just like Frito-Lay Corporation.

That sounds good, Slip. Be careful around Terri and the baby today. If your insides are anything like those of the men in my family, Frito Pie has an unfortunate second-day side effect. Maybe it's the onions. Maybe it's that sometimes people make it with chili with beans.I don't know exactly what it is and why it doesn't affect ladies the same way (perhaps it's that we're able to exercise restraint, even colonically). I just know it can be deadly from a methane perspective!!!

it doesn't have that effect on me <.<

matter of fact, hardly any foods do.... salsa and eggs are all that i know of off the top of my head that do.

It'll blow your mind, Lip. You have to make the original recipe though, then experiment with other things.

It kinda reminds me of this thing called a 'walking taco' that is made around here in Ohio for high school sporting events, it's also made with Fritos.
