I'm planning on growing one plant indoors. Is the smell from one plant THAT bad, or is it variable?
Depending on strain, it could still stink up your entire house/apt, especially when harvesting. But probably easily covered without a carbon filter.

How long is a piece of string?
A single large plant can stink SO bad... a bunch of low-odor plants might not smell much at all.

init, choose your strain... some seed banks online offer info on how much the bud stinks, as well as the other standard info, but some don't... but it isn't hard to find out.... decide what kinda buzz you want from your herb, while browsing the seed banks.. ..then ask folks if they have work with the strains of your choice is my advice.. you might get an answer more conclusive that way
& the urbangrower website might be able to help as people do discuss the crops in the rooms they are in etc...

A good carbon filter will deal with your odor issue for you. You can use it as a room scrubber or just on your exhaust.
Happy growing

See, I plan on growing one plant just to test the waters a bit; I'm using a seed I germinated out of a bag I got a while ago, so I'm not sure of the strain (but it WAS pretty damned good weed :-D). I plan on growing it in a cabinet under a sink in my room.
